The Factory
Gatomboya factory is operated by the Barichu Farmer Cooperative Society (F.C.S.), which has about 1,000 smallholder members, about 900–950 of whom are active. The farmers grow on very small plots, and also tend macadamia, corn, bananas, and beans. Cherries here are sorted, depulped, fermented overnight before being washed, and then placed on raised beds for 10–12 days.
Peaberry
Most coffee cherries produce two seeds, but occasionally, a cherry will form only one. These rare solo beans are called peaberries, named for their small, round, pea-like shape. The exact cause of this natural mutation remains a mystery—factors like weather, pollination, or plant nutrition may play a role, but no one has been able to replicate it intentionally. Peaberries make up less than 10% of a coffee harvest and are often prized for their concentrated sweetness and complex flavor, setting them apart from their flat-bean counterparts.
